Cheddar Bacon Muffins…Yeah.
I’m not usually one to jump on the bacon band-wagon. It’s delicious, I’m not denying that—I just don’t see what all the fuss is about. Well, unless you pair it with cheddar and bread…then I’m pointy-foam-finger fan number 1. Do I love muffins? Yes. So logically, I would love a muffin made with cheddar and bacon. I mean…come on, man.
What you need:
2 cups all-purpose flour
3 teaspoons baking powder
2 cups shredded sharp cheddar cheese
2-3 slices cooked bacon, chopped
1 tablespoon chopped fresh chives
1/8 teaspoon kosher salt
1/8 cayenne pepper
1 cup unsalted butter, melted
1 cup sour cream
1/2 cup milk
How you make it:
-Preheat oven to 375 degrees.
-In a large mixing bowl, combine flour, baking powder, cheese, bacon, chives, salt and pepper.
-In a separate bowl, combine melted butter, sour cream, and milk.
-Combine wet ingredients with dry ingredients. Batter will be thick.
-Spoon batter into a greased muffin pan.
-Bake for 15-20 minutes until muffins are golden and a toothpick inserted near the center comes out clean.
-Eat.
